Adequate nutrition for malnourished people with chewing and swallowing disorders (dysphagia)

People who suffer from chewing and swallowing disorders (dysphagia) are often affected by malnutrition on average, because there is often a lack of adequate preparation/presentation of food and drinks. As a result, less is eaten and the BMI decreases.

To counteract this, fortification with a balanced mixture of macronutrients (carbohydrates, fat and protein) based on the recommendations of the German Nutrition Society (DGE) is necessary, a so-called balanced diet. Nowadays, this is achieved in various ways:

Fortification with maltodextrin is most common because maltodextrin is a very inexpensive product (<5 euros/kg). Unfortunately, it is often not recognised that maltodextrin is only of limited us in combating malnutrition. Maltodextrin is primarily intended for energy fortification, as it is metabolising immediately after ingestion and causes blood sugar levels to rise. Pure maltodextrin fortification is not suitable for building muscle mass and strength and should therefore always be done in combination with fats and/or proteins.

Very often, kitchens try to prepare hyper-caloric shakes on their own – 99% of these are milk/cream-based in the form of hyper-caloric milk shakes. This often means little variety for those affected and the consumption of dairy products in dysphagia should generally be reduced because of the risk of mucus build-up. Furthermore, the production is very labour- and time-intensive. That is why many people resort to so-called hyper-caloric drink powders – which unfortunately only work well in milk or water.

In the area of convenience products, there are so-called fully balanced hyper-caloric drink nutrition from well-known brand manufacturers, which can even be prescribed. However, if they are not available on prescription, they are very expensive. Furthermore, they are not very popular with the residents and/or patients because the sweet, artificial taste is often complained about.

Against the background of the lack of a satisfactory solution, biozoon GmbH has worked out a new product concept and developed a first product in the last 18 months – seneoforte. It is the first and only hyper-caloric powder that works in any drinks and liquid foods except milk. Whether it is added to coffee or the person’s favourite juice – the taste and thus the enjoyment experience is retained. It also works wonderfully in mashed potatoes or an energy broth. The composition of the high-calorie drink powder closely follows the recommendation of the DGE, namely 50% carbohydrates, 30% fat and 20% protein.
