As the most important form-giving substance in lignified plant fibres, in foodstuffs too cellulose can improve the structure of liquids and gels as well as the stability of foams. Thus cellulose is used industrially in a wide range of areas, including the manufacture of mayonnaise, sauces and ketchup, desserts and ice-cream, baked goods and fat-reduced foodstuffs.<\/p>\n<div>By contrast to other types of cellulose,\u00a0<b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/span><\/b>is highly soluble, gives liquids a viscous consistency, and forms firm gels when heated. The help of small quantities of\u00a0<b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/span><\/b>is already sufficient to transform liquids into stable, airy foams which last a long time. Large-pored, airy foams are produced by beating the liquid (&#8220;mounting&#8221;) with an electric whisk. To improve water binding, the combination of\u00a0<b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/span><\/b>with\u00a0<b><span style=\"color: #00b050;\"><em>Xantha<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/span><\/b>is recommended. Foams which are denser and more creamy can be produced from the liquids containing\u00a0<b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/span><\/b>using a cream siphon.<span style=\"color: #00b050;\"><b>\u00a0<em>Cellu<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/b><\/span>tolerates high salt concentrations and is acid-stable.<\/div>\n<div>\n<p>When heated to temperatures &gt;60\u00b0C,\u00a0<b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon\u00a0<\/span><\/span><\/b>forms firm gels which melt in the mouth or during cooling.<\/p>\n<p><b>Ingredients: <\/b>stabilisation agent methylcellulose (E 461), maltodextrine<\/p>\n<p><b>Use: <\/b><em>Instructions for the production of cold foams<\/em><em>:<\/em> Dissolve 6 level measuring spoons of <b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon <\/span><\/span><\/b>in 110ml of hot water and allow to cool down to refrigerator temperature; Stir cold <b><span style=\"color: #00b050;\"><em>Cellu<\/em><span style=\"color: #808080;\">zoon<\/span><\/span><\/b><span style=\"color: #00b050;\">\u00a0<\/span>solution to a smooth mixture before use.
