{"id":334,"date":"2021-04-14T09:03:51","date_gmt":"2021-04-14T09:03:51","guid":{"rendered":"https:\/\/biozoon.de\/webshop\/?post_type=product&#038;p=334"},"modified":"2025-07-01T13:07:06","modified_gmt":"2025-07-01T13:07:06","slug":"smoothbrot-16-kg-2","status":"publish","type":"product","link":"https:\/\/biozoon.de\/shop\/en\/product\/smoothbrot-16-kg-2\/","title":{"rendered":"smoothBrot 1,6kg bucket"},"content":{"rendered":"<p><span style=\"color: #ff6600\"><strong><em>smooth<\/em><\/strong><\/span><span style=\"color: #808080\"><strong>Brot<\/strong><\/span> in a 1,6kg bucket<\/p>\n<p>Mixture for the production of consistency defined bread:<\/p>\n<ul>\n<li><strong>high protein content<\/strong><\/li>\n<li><strong>authentic bread taste<\/strong><\/li>\n<li><strong>sliceable and easy to spread<\/strong><\/li>\n<li><strong>Content enough for approx. 8 loaves (approx. <\/strong><strong>160 slices)<\/strong><\/li>\n<\/ul>\n<p><strong>Ingredients: Gluten, <\/strong>maltodextrin, <strong>whey protein, <\/strong>oil powder, gelling agent agar agar, stabilizer xanthan gum<\/p>\n<p><strong>Use: <\/strong>Soak 450g of roughly chopped, dried bread in 1050g of water for approx. 30 minutes. Puree the mass for approx. 30 seconds at the highest speed (preferably using a Robot Coupe Blixer or similar). Stir in 300g of <strong><span style=\"color: #ff6600\"><em>smooth<\/em><\/span><span style=\"color: #808080\">Brot<\/span><\/strong> ready-mix with a whisk. Put the mass in a lined loaf tin (approx. 25.5 x 11.5 x 7 cm) and cover with clingfilm. Bake in the steam oven at 115\u00b0C, 100 % steam for approx. 120 minutes. At the end of the regular baking time, measure the core temperature (min. 90\u00b0C).
